The Reichert-Meissl value is a measure of soluble volatile fatty acids (chiefly butyric and caproic) and the Polenske value is an index of the insoluble volatile fatty acids (mostly caprylic, capric, and lauric). The Kirschner value is a measure of butyric acid. All are expressed in terms of the mL of 0.1 M NaOH required to neutralize the fatty acids obtained from a 5 g test sample under the specific conditions of the method. The methods are applicable to normal fats and oils but are generally applied to butterfat, oils of the coconut group, and similar products.
