Analysis of 2- and 3-MCPD Fatty Acid Esters and Glycidyl Fatty Acid Esters in Oil-Based Emulsions

This extraction procedure enables the isolation of fatty acid esters of 2-chloropropane-1,3-diol (2-MCPD), 3-chloropropane-1,2-diol (3-MCPD) and glycidol from various oil-based emulsions, such as spreads, margarines, dressings and mayonnaise. The complete determination of these compounds is achieved by combining this extraction procedure with the previously published indirect method developed for the analysis of oils and fats, e.g., AOCS Cd 29a-13, Cd 29b-13 or Cd 29c-13. This extraction procedure (1) is applicable to spreads, margarines, dressings, and mayonnaise.
