The iodine value (IV) is a measure of the content of unsaturated fatty acids. The test sample is reacted with Wijs iodine trichloride solution; the unreacted excess reagent is determined by titration with standard sodium thiosulfate solution. The iodine value indicates the g iodine which reacts with 100 g lecithin. Applicable to all vegetable lecithins.
