The thiocyanogen (SCN)2 value is a measure of the unsaturation of fats and oils and is expressed in terms of the equivalent number of centigrams of iodine absorbed per gram of sample (% iodine absorbed). Since thiocyanogen does not add to fatty acids such as linoleic and linolenic in the same proportion as iodine, it is possible through thiocyanogen and iodine absorption measurements to calculate fat or fatty acid composition. Applicable to all normal fats and oils not containing conjugated systems.
