DEFINITION Methyl esters of fatty acids from margarine are separated and measured by GLC using a packed column to determine total trans unsaturation content [trans-isomers of unsaturated C18 acids]. SCOPE The method is applicable to the determination of total trans unsaturation in margarine after conversion of the samples to their methyl esters. Results by this method are comparable to those obtained by infrared spectroscopy (AOCS Official Method Cd 14-61).
