DEFINITION This method determines the cis, cis 1, 4 methylene interrupted diene structure (–CH=CH–CH2–CH=CH–) of polyunsaturated fatty acids, using the enzyme lipoxidase. SCOPE Applicable to esters of fatty acids and to triglycerides having two or more double bonds. The enzyme is specific for the double bond structure listed under Definition, and will not react with conjugated double bonds, monoenoic acids, or trans double bonds.
