This method is applicable to all raw sugars [1,2] (General Subject 1), white sugars and specialty sugars requiring clarification (General Subjects 2 and 3) [3]. It is an alternative to Method GS1/2/3-1 which permits the elimination of clarification with basic lead acetate by using polarimeters with light sources operating in the near infrared (NIR) wavelength range. Such polarimeters are able to read solutions with much higher colour than hitherto.
