This method determines a-monoglycerides from the periodic acid consumed in the oxidation of the adjacent hydroxyl groups. ß-Monoglycerides are not oxidized by periodic acid because the hydroxyl groups are not adjacent. This method is applicable to fats, oils, monoglycerides, and blends. This method is not applicable when the test sample contains, in addition to monoglycerides, chloroform-soluble polyhydric substances with two or more adjacent hydroxyl groups. Note: At a-monoglyceride levels below 15%, there may be interfering oxidation products in the test sample which will contribute to an analytical result that is higher than the actual a-monoglyceride content. In such cases, the analyst may consider the use of the GLC method, AOCS Official Method Cd 11b-91. This is a joint AOCS-Association of Official Analytical Chemists (AOAC) method (References, 1).
