This method determines the mass per unit volume (“liter weight”) of oils and fats in order to convert volume to mass or mass to volume, and involves the measurement of the mass, at the required temperature, of a volume of the oil or fat contained in a pycnometer that has been calibrated at the same temperature. The mass per unit volume (“liter weight”) of an oil or fat is defined as the ratio of the mass of the oil or fat to its volume at a given temperature and is expressed in grams per milliliter (g/mL) or kilograms per liter (kg/L). This method is applicable to animal and vegetable fats and oils that do not deposit crystals at the temperature of determination. The determination may be made directly on test samples that are liquid at ambient temperature, or after complete melting of other test samples, preferably at 40, 50, or 60 °C. If necessary, a higher temperature may be used. This method, identical to ISO 6883 (1987), is used in the international trade of oils and fats.
