2017

3

665.0288 AOCS 7th ed. 2017-2019 rev. Ref.

Unsaponifiable matter includes those substances frequently found dissolved in fats and oils that cannot be saponified by the usual caustic treatment, but are soluble in ordinary fat and oil solvents. Included in this group of compounds are higher aliphatic alcohols, sterols, pigments, and hydrocarbons. Applicable to fats and oils containing higher levels of unsaponifiable matter than usually found in normal tallows and greases. This method is especially suited for marine oils, but is also applicable to vegetable oil deodorizer distillates and sludges. This method does not apply to feed-grade fats.
