Sodium (sodium soap) and calcium (calcium soap) present in a fat or oil sample are acidified and then extracted into a known volume. The sodium and calcium concentrations are measured using flame AAS and can be directly measured after calibration of the instrument. The method is applicable to unemulsified fats and oils.
