The method determines the short and long spacing of the fat crystal structure and identifies the predominant crystal forms through interpretation of the X-ray diffraction pattern. The method is based on a collaborative study carried out by the AOCS Physical Methods Technical Committee during 1995. The collaborative study results are summarized in Tables 3, 4, and 5. Applicable to any triglyceride ester that retains a molded shape at the temperature of analysis (temperature up to 25°C).
